About the Vineyards
“Wine is made in the vineyard” as the French saying goes. At the Jaffa Winery we live by this rule and consider our vineyards to be the most important part of our wine making process. Our wines contain an abundance of flavors which embody the fascinating stories of the Ela Valley. With each sip, one can taste the unique “Terroir” of the region and the love the winemaker has to his vineyards.
The vineyard plots in the Jerusalem Hills are meticulously nurtured and pruned and yield relatively few, but high-quality grape clusters. Nighttime harvests and enormous investment in the vineyards contribute to the quality of the winemaking process.
