pet-nat 2023
Pet-nat is short for “Pétillant Naturel,” a French term for naturally sparkling wine. This particular Pet-Nat is made from Chardonnay grapes grown in Moshav Mata in the Judean Mountains at an altitude of 600 meters. The wine was bottled towards the end of Its fermentation process, allowing it to complete the final stages of fermentation in the bottle, which gives it a cloudy appearance. The wine is light, fruity, and fresh, with citrus notes and a hint of tropical fruit. It pairs wonderfully with cold appetizers and spicy dishes.

Heritage White 2022
a Delicate golden color wine with fresh blossom aromas, apricot, orange peels, hints of vanilla and cinnamon. A medium-bodied wine, with a buttery texture, balanced acidity and a pleasant long and finish. The grapes arrive cold at the winery, undergo gentle pressing, cold fermentation followed by cold maturation for 6 months in barrels and stainless-steel tanks. A process that leaves the wine with fruity flavors along with great acidity and mild seasoning from the oak barrels. The wine was fermented and aged in French oak barrels for 6 months. Heritage red 2021
A rich and complex wine with ripe aromas of black and red fruit, purple plum, strawberry and jam with hints of roasted coffee and dark chocolate. The wine is powerful yet well-balanced, with a smooth texture, full body, and a long-lasting finish. The grapes are sourced from low-yield vineyards in the Kadesh Valley and a plantation vineyard in the Judean Mountains. Harvesting is done manually at night to ensure the grapes remain cool and arrive quickly at the winery for a controlled fermentation process that lasts 10 days, followed by a two-week period of soaking on the skins. Afterward, the wine undergoes malolactic fermentation. Aging in new French oak barrels for 18 months. Went through three maturations until the bottle. Merlot 2022
A lush, delicate wine with a long finish and aromas of red fruits with a greenish touch of leaves and mint. The Merlot grapes are harvested from high-quality plots in the Judean Mountains, where the vines are carefully thinned to ensure a limited yield. The harvest is done manually to preserve the quality of the grapes throughout the production process. After gentle crushing, the wine ferments on the skins for two weeks. It is then softly pressed and transferred into a variety of oak barrels to encourage a diverse flavor profile. The wine ages in these oak barrels for 12 months. This wine is an excellent pairing for meat dishes, stews and flavorful cheeses.
Malbec 2022
Soft and velvety deep purple wine. Its bouquet offers gentle notes of ripe blueberries, complemented by subtle hints of vanilla and tobacco. Medium tannins with pleasant acidity. The Malbec and Cabernet Franc grapes are sourced from high-altitude vineyards in the Judean Mountains. After being harvested manually, the grapes undergo cold maceration, followed by a two-week fermentation on the skins to extract color and tannins. A second fermentation follows, after which the wine is transferred into a variety of oak barrels to develop a more complex flavor profile. It is then aged in oak barrels for 12 months. This wine is a great match for meat dishes.
Syrah 2022
This wine features an harmonious blend of floral and spicy aromas that meld beautifully with the bright notes of fresh red fruit. It has soft tannins, a bold color, and a floral and peppery character with a long-lasting finish. The Syrah grapes are sourced from the Kadesh Valley, while the Merlot and Malbec come from the Judean Mountains. Following a manual harvest, the wine undergoes cold maceration, followed by a two-week fermentation on the skins to extract color and tannins. After pressing, it goes through a second fermentation before being transferred into various types of oak barrels to develop a wider range of flavors. The wine is then aged in oak barrels for 12 months. This wine is an excellent companion to meat dishes.
Cabernet sauvignon 2022
A lush, powerful and concentrated wine with aromas of black fruits, spices, chocolate and subtle hints of herbs. The Cabernet and Merlot grapes were harvested from high-quality plots in the Elah Valley, Manually harvested to maintain the integrity of the grapes until the beginning of the production process. after a long soaking on the skins, The wine is then pressed and fermented a second time before being transferred to a variety of oak barrels to add complexity. The aging process is done in French and American oak barrels for 12 months and blown twice before the final bottling. An excellent accompaniment to grilled cuts of meat, stews and flavorful cheese.
Chardonnay 2023
A balanced wine with a sharp and rich citrus aroma with fresh fruit flavors. Perfect volume and long finish, Crafted without any barrel aging. the wine is made from high-quality grapes grown in the Yehuda Mountains area, which are harvested by hand. The grapes undergo cold fermentation to extract and preserve the distinct aromas of the two grape varieties. This wine is a delightful pairing for fish and cheese dishes.
Sauvignon blanc 2023
The grapes come from cultivated plots in Moshav Mata, located in the Judean Mountains. A cold and slow fermentation process is used to retain the distinct aromas of the grape variety, resulting in a refreshing, crisp, and fruity wine. It is perfect for pairing with light dishes, including fish and cold meats.
