A lush, delicate wine with a long finish and aromas of red fruits with a greenish touch of leaves and mint.
The Merlot grapes are harvested from high-quality plots in the Judean Mountains, where the vines are carefully thinned to ensure a limited yield. The harvest is done manually to preserve the quality of the grapes throughout the production process.
After gentle crushing, the wine ferments on the skins for two weeks. It is then softly pressed and transferred into a variety of oak barrels to encourage a diverse flavor profile. The wine ages in these oak barrels for 12 months.
This wine is an excellent pairing for meat dishes, stews and flavorful cheeses.
