The grapes come from high-quality, low-yield vineyards located near the winery in the Elah Valley area. Harvesting is done manually before sunrise to ensure the grapes are cool, which enhances the fermentation process.
The wine undergoes a long soak on the skins to extract deep color and tannins, followed by pressing and a second fermentation. Each grape variety is aged separately, with the final blend being crafted one month before bottling. The wine is then aged in new oak barrels for 18 months, contributing to its depth and complexity.
This wine pairs excellently with classic beef and lamb dishes.
